These are herbs that are often found in our kitchens, taking control of our own health can be not only effective but empowering. Foods that are colourful contain high levels phytonutrients which are to protect the plant from predators, these are then transferred to us when we consume them.

Immune Support Juice

This is one of my favourite daily go to juices. A, B complex C, iron and zinc are just some of the goodies found in this recipe with a good dose of anthocyanin’s found in beetroot. I just don’t feel right when I miss this out. Its delicious, enjoy!

1 medium sized organic beets

1 large organic carrot

1 thumb sized piece fresh organic ginger root

1-2 organic apples (depends on the size of apple)

1 organic orange

1 large stick of celery or large piece of fennel

¼ organic lemon

Method:

Put all ingredients through a juicer, drink immediately

Barley soup

Soup is a great way to get most of your daily nutrients, you can make a big pot and have it for another meal.  Soup is great for everyone and can be a great food when you are not feeling so good. Barley has been used for its high levels of B & E vitamins.

3 cups of water

1 onion

1 tsp grated

½ cup of sliced mushrooms

½ cup of pot barley (cook barley before putting into your soup)

1-2 tsp of miso or tamari

Handful of chopped parsley

Handful of chives or spring onions

Method:

Cook barley with enough water, for approx 20mins

Sauté onions, mushrooms, garlic, be careful not to overheat

Add water, barley and rest of the ingredients gently cook for approx 10mins. You can add more flavouring ie miso to taste, serve with some additional chopped parsley and spring onions.

Aniseed Tea

Aniseed has traditionally been used as a expectorant and cough suppressant that is good for hard painful dry spasmodic coughs. It has the ability to cut through secretions and sticky phlegm.  This is a great recipe, try it next time you or anyone you know has a cough.  Its also great for children. There are two versions here, the quick steep and the decoction, which is my preferred one!

Quick Tea

½ tsp dried organic aniseed

½ tsp dried organic Thyme

Method:

Steep in a pot or large mug of boiling water, cover for 5-10 mins, add organic raw honey (vegan: organic maple syrup)  Drink 3-4 cups daily until cough subsides.

Decoction – which makes a cough syrup.

1 ½  cup filtered or mineral water

1 tsp dried organic aniseed

1 handful of fresh organic Thyme herb

1 handful of fresh organic Sage leaves

1 tbs of fresh organic grated ginger root

1-2  organic fresh lemons (depends on the size)

1 300g jar of organic raw local honey (vegan: organic maple syrup)

Method:

Put water into saucepan, grate the rind of 1 lemon and squeeze the juice and add the skin to the pan, squeeze your 2nd lemon and put the skin into pan. Add all herbs and ginger, heat all contents stirring occasionally, continue to cook on a rolling simmer for 20mins.

Strain the contents and return your liquid to stove and continue to heat on a rolling simmer until the liquid is reduced to half. At this stage stir in honey or maple syrup and heat without boiling until slightly thickens.  Wait for it to call and decant into sterilized bottles.

Adults: take 5ml when required.

Children: take 2.5ml when required.
