Elderberry Syrup
1 cup of fresh elderberries
3 cups of water
1 handful of fresh thyme
1 fresh organic lemon
A thumb sized piece of fresh organic ginger root (optional)
1 cup of organic raw local honey
Method:
Add water, elderberries, thyme to the pan. Add grated ginger(if your child is okay with this, ginger is a grate decongestant and carrier of other ingredients). Grate the rind of the lemon then cut in half and squeeze in the juice, add the remaining lemon into the pan with everything else. Simmer over a low heat for 30-45mins. Take off the heat and mash the elderberries then put all ingredients through a fine mesh strainer and discard, add the jar of honey to the liquid stir in well and bottle liquid into sterilized bottles, when cooled store and refrigerate. Lasts for approximately 2-3 months.
